Auricchio's Chilli Pecorino is a cheese with a rind bearing the characteristic signs of the basket in which it is formed, it is straw-yellow in color with flakes of semi-spicy red chili pepper and with a semi-soft rind. The paste is compact white in color with possible holes of a very small size with the chilli flakes visible.
